Ingredients

  • 1 bag frozen gyoza / dumplings of choice~ 1lb
  • 1 can coconut milk ~ 14oz
  • 2 tbsp Thai red curry paste
  • 3 cloves garlic minced
  • 2 tsp ginger grated
  • 3 cups spinach or leafy greens of choice
  • green onions sliced, to finish

Instructions

  • Preheat the oven to 375°F.
  • While the oven is heating, in a baking dish, add the coconut milk, curry paste, minced garlic, and ginger. Whisk the ingredients until combined.

  • Add the vegetables to the dish and toss to coat.

  • Nestle in the frozen dumplings (no need to defrost), spooning some of the liquid on top of the dumplings.
