I Am... One Pot Creamy Pumpkin Mac and Cheese Recipe

One pot pumpkin mac and cheese is my new fall favorite meal and maybe it will be yours too. As much as I love baked mac and cheese (or even waffled mac and cheese) there's something about a one pot, stovetop recipe that gets me every time. This one is the one guys, it's the mac and cheese you've been looking for!

I Am... How to Make Basic, Great Pho

Hello Pho! To me there's nothing better than a basic, great pho. I mean, I've seen fancy versions where there are whole marrow bones, truffle, and thinly sliced dry aged rib eye, but give me a house special any day and I'm a happy noodle. Pho dac biet, literally house special, as explained to me by Mike, is essentially the pho that has whatever the restaurant wants it in, like all Asian house specials. Usually that means some variation or all of: steak, brisket, flank, tendon, tripe, and meatballs.

I Am... Creamy Spinach and Mushroom Pasta Recipe

This creamy spinach and mushroom pasta always hits the spot when I'm craving something comforting and quick. I love it because the sauce comes together in the amount of time it takes to cook the pasta. You can't go wrong with butter, garlic, mushrooms and spinach!

I Am... Crispy Pan-Fried Shrimp Potstickers Recipe

These crispy shrimp potstickers are addictive! I like a looser potsticker filling when it comes to shrimp because I like the texture, so I go old school and use a knife to chop up shrimp until it becomes a sort chunky paste. From there, it's just a question of mixing in some aromatics – in this case, ginger, garlic, toasted sesame oil, and green onions – and a quick wrap. You could wrap these up the traditional way, but I like the extra crispy bottoms you get when you kind of roll them up and just pinch the tops together. These guys are so crispy and juicy, you won't need takeout anymore ;)

I Am... Miso Smashed Cucumber and Green Bean Salad Recipe

This is little riff off of the classic Chinese smashed garlic cucumber dish, but with a little bit of a Japanese twist due to the miso and rice vinegar. If you haven't tried smashed cucumbers, give it a go! It sounds kind of funny, but I love the texture of smashed cucumbers – probably because they remind me of hot evening summers. Smashed cucumbers are an incredibly popular Chinese cold dish, both because they're easy to make and delicious.

I Am... The Massive Japanese Food Fair You Don’t Want to Miss: Furusato Matsuri in Tokyo

Earlier this year, Mike and I were in Japan, eating our faces off. I miss it so much. So much that I haven't really written about our time there, but that's about to change because we happened upon a gigantic number of photos that we took but didn't edit. I've been inspired! And the first post had to be about Furusato Matsuri! If you're looking for what to do in Tokyo in January, this is the answer.

I Am... Friday Finds: 10.13.17

Happy Friday the 13th!!! In OCTOBER!??! What is this madness? I'm both scared and not scared? Hopefully nothing crazy happens today. Do you guys have plans for the weekend? I'm calling it now, I'm hoping it's a lazy one in with lots of Netflix and cozy leftover eats. And maybe some cooking too because who can resist putting on a big pot of soup/stew when at home. Does anyone else like it when their house smells like food? Or does it drive you crazy? I flip flop back and forth, sometimes I love it and sometimes, I open all the windows and run around with febreeze. Anyway, if you're cozying up on the couch, here are some read for you!

I Am... Vietnamese Bo Kho Braised Wagyu Brisket Recipe

It's been raining for the past couple of days and while I'm sad that we aren't getting as much walking in, I've been super happy with the weather enforced cozy vibes. Mike and I have been on a soup and stew craze: our fridge is FULL to the brim of various stocks, soups, and stews, in various stages of doneness and assembly. We love experimenting while cooking – Mike a little more so than me – and not to toot our own horn, but we have been making so many amazing things. The only problem is, we've amassed a huge amount of leftovers. Anyone want to come over and help eat?

I Am... What to Cook in October

Have you been asking yourself, "what to cook in October?" I've got you! It's full on fall with the leaves on the trees changing color and frost starting to appear in the very early morning. It's time to start fattening up! I'm still clinging onto the last little bit of warm afternoon sun but I'm definitely getting ready to hibernate with ALL the soups and stews. The stuff that's in season in October is much the same as September, minus the berries, so this month, instead of rounding up in season recipes, I thought I'd round up soups and stews, cute Halloween-type recipes, and the ultimate snack foods for tailgating! What are you guys looking forward to cooking in October? Fun things to make in October: SOUPS AND STEWS Dan Dan Zoodle Soup - Hearty, spicy, and warming. Bonus: zucchini are in season right now! Warm and Cozy Beef Bourguignon - Red wine, chunks of fork tender beef, carrots, pearl onions, and mushrooms.  I could eat this everyday! Plus, carrots and mushrooms are in season in October :) Creamy Comforting Chicken Congee with Crispy Chicken Skin - It may not look like much, but this chicken congee is comforting and so, so tasty, especially with the scallion ginger oil and crispy chicken skin bits. Perfect for warming up. Dishoom Black Dal - If you're craving a bit of spice to warm up, this dal is just what you're looking for. It's filling, hearty, luxurious, and best of all, full of protein from the lentils. Like traveling to London to eat at Dishoom without the expensive plane ticket. Turkey Pho - Are you gearing up for Thanksgiving next month? Maybe you tried your turkey recipe early and are wondering what to do with the leftovers? Turkey pho to the rescue! Piping hot slippery firm rice noodles, tender turkey, and an umami-rich full bodied broth. CUTE FOOD MASQUERADING AS TOTORO Buttermilk Totoro Pancakes - If you want to bring a smile to someone's face, these Totoro pancakes will definitely do the job! Like regular buttermilk pancakes, but Totoro shaped. Totoro Pumpkin Whoopie Pies - Soft and squishy in the best way possible, these spiced pumpkin whoopie pies are filled with cream cheese frosting. Kind of like a cross between a very soft cookie and a cake, these guys taste great even if they're not Totoro shaped. Totoro Pull Apart Buns - These may be the best buns I've ever made, Totoro shaped or not. If you love soft and fluffy white buns, this is the recipe for you! They're delicious on their own, alongside a bowl of soup, or with soft scrambled eggs. TAILGATE PARTY!!! Japanese Fried Chicken aka Chicken Karaage - Bite size pieces of chicken marinated in soy, mirin, sake, ginger, garlic, and a touch of sugar. Extra juice because of the marinade and extra crispy due to a double fry. Best of both worlds! Perfect Bite Nachos - I like my nachos perfect in every bite and I bet you do too! A little bit of upfront preparation  means faster hand to mouth action when you're snacking. Mac and Cheese Waffles - These are kind of overkill but they are SO good so I won't blame you if you make them and eat them all in one go. Think: lacy crispy cheese crust and creamy dreamy insides, all in a convenient handheld waffle shape. Mini Corn Dogs - It might not be summer fair season anymore, but that shouldn't stop you from eating mini corn dogs. Crispy, corn-y and perfect for dipping. Happy Cooking! Let me know what you're making in October. Inquiring minds (mine) want to know!
