Cheese has always got my back – its versatility is second to none. For a treat, I'll melt it between two golden brown buttered crispy pieces of bread. If I want to make it even more indulgent, I'll add sweet juicy tomatoes and fresh basil to bring the whole thing over the top. A caprese grilled cheese is always a good thing in my books.

I had a perfectly serendipitous moment on Wednesday. See, for my birthday dinner, all I wanted was a big ol' pan of lasagna. And I wanted to make it myself because that's the kind of thing I find fun: layering noodles, sauce, and cheese. Unfortunately an issue with the oven (it's fixed now!) made lasagna making at home impossible so we decided to head out to a pasta place – one that focuses on fresh pasta and seasonal ingredients, not the sort of place that makes lasagna. But...after we settled ourselves into the cozy bar, I looked on the fresh sheet and saw it! LASAGNA! Of course I ordered it and it satisfied all my lasanga cravings. Needless to say, it was a good day.

To me, there's nothing more comforting that a steaming hot bowl of noodles. If you've ever watched Ratatouille (I love that movie!), you'll recall this scene where the food critic is instantly brought back to childhood when he has a bite of ratatouille. My mom never made me stir fry yaki udon as a kid, but she did make bowls and bowls of other kinds of noodles. As a result, noodles (all kinds) are one of those extremely comforting foods for me.
